Species

About 20 species of sea cucumbers are commercially fished. Compared to five years ago, the present landings comprise a significant increase in landings of the less valuable species commonly known as the 'worm' species. They include Holothuria leucospilota (local name "patola") and species known locally as "tri kantos", "quadro kantos", black beauty, broam beauty, hot dog (Holothuria edulis), "lubuyoh tadik" and "bantunan" (Holothuria pardalis). Figure 1 shows some of the common commercial species in Sabah and their local names.

Prices of sea cucumbers are related to the thickness of their body wall and their size. Species with a thick body wall (like teatfish) command higher prices than those with a thin body wall. For the 'worm' species, the 'large' category comprises 25-30 pieces to a kg, the 'medium category' 70-80 pieces per kg, the 'small category' 130-140 pieces per kg and extra small more than 180 pieces per kg. The wholesale price of some of the commercial species of beche-de-mer is shown in Table 1.

Market Price for Dry Sea Cucumber

Couple of months back, i have done a quick market price research for dry sea cucumber at Penang, Ipoh, Melaka and Muar, Johor.

I noted the price of mid size dry sea cucumber had fetch the price at RM500.00 or more. That make me realize that no wonder many uncles and aunties ask me to buy sea cucumber for them.

Yes, the price is cheaper here and the the quality is assured. I commented this because from a person who seldom consume sea cucumber and now become a person who start to appreciate this valuable creature and getting more in touch with this precious delicacy.

Believe me this is really a good stuff especially for your preparation of older age.

Preparing Dry Sea Cucumber

In Chinese, the sea cucumber is called "Hai Sen", "Hoi Sam" or "sea ginseng" is a "yang" or "heaty" food, reputed to be a general tonic and aphrodisiac. Rich in iron and contains minerals like calcium, magnesium and zinc, the sea cucumber has been known to help ease arthritis pain and relief joints discomfort..

Often sold in dried hard form, preparing dried sea cucumber can be time consuming and requires a lot of work. After removing the skin, you have to reconstitute it in water which is drained daily for 4 days, occasionally wash it under running water, boil it with slices or ginger or
pineapple skin in between to remove the “fishy” odor, so that it expands to several times its original size and becomes soft again. Drain and keep in the refrigerator until ready to use. Not prepared properly, it can have a rubbery-tough-to-chew texture that can be unappealing and taste wrong. As for fresh sea cucumber, expanded and sold soaked in water, which can sometimes be found in Chinese markets, needs only a rinse and boil the same way described above. The best kind of fresh sea cucumber is black in color, with smooth surface and fine gloss.

海参食谱-玉兔海参

主料: 水发海参400克,熟鹌鹑蛋8个,熟笋肉40克,水发香菇20克,红辣椒片、葱段、红辣椒尖、蒜末、姜末、精盐、味精、绍酒、花生油各适量。

做法:
 1、将海参切成片,放入沸水锅里焯一下捞出;笋肉、香菇分别切成片。
 2、炒锅置旺火上,倒入花生油烧至五六成热,放入蒜末、姜末煸至金黄色,下海参、笋片、香菇、绍酒颠翻几下,加入精盐、清汤烧沸后,改用小火烧至入味,放入红辣椒、葱段、味精,用湿淀粉勾芡,淋上葱油推匀,出锅装在盘中。
 3、在熟蛋上切下一椭圆形的蛋,平放切成V形,做兔子的耳朵。把切去那面的蛋平放,并在尖头的一面切成一条缝,接上兔子的耳朵,取2个红辣椒尖贴在耳朵的下方两侧成了玉兔,摆在海参的周围即可。

海参特点

海参简介海参是生活在海边至8000米的海洋软体动物,据今已有六亿多年的历史,海参以海底藻类和浮游生物为食。海参全身长满肉刺,颜色可随环境变化而变化。它一般夏季潜藏于石头地下休眠,硬如坚石,所以捕捉多在冬季或春季。海参对周围的水环境要求很高,怕油怕脏,一滴油或一根头发就能让它溶化成水,仅此一点就知道海参是多么环保的食品。海参的价值古人曰:能吃海里游的,不吃地上跑的。海洋生物是微量元素的宝库,海参、海水鱼、海虾等海洋生物中钙、碘、铁等含量是禽畜肉的几倍甚至几十倍。海参不仅是珍贵的食品,也是名贵的药材。据《本草纲目拾遗》中记载:海参,味甘咸,补肾,益精髓,摄小便,壮阳疗痿,其性温补,足敌人参,故名海参。常食吃海参有的好处海参生长速度缓慢,全靠人工潜海捕捉,营养价值丰富,因此十分名贵,所以中国早先的海参多销往日本、美国、加拿大、澳大利亚等发达国家。日本孕妇很早就有吃海参的传统,现在许多日本女士一旦怀孕,仍然每天食用一个海参。海参有“百补之首”的美誉。

海参的价格(renminpi) - Pricing

海参的价格是个微妙的问题,传统意义上来说,野生、底播的海参价格要远远高于虾池和围堰养殖的海参价格。我们先简单的算一笔帐就可以大体知道海参的成本:正常情况下,用底播的标准规格的刺参来加工盐干海参为例,25斤鲜活刺参能出1斤盐干海参,目前,优质鲜活的底播刺参价格为80元/斤,一斤严格按照工艺标准加工的盐干海参成本就是80元/斤×25斤=2000元,再加上人工费、加工费、运输费等等,市场建议售价约为3000元/斤,头数约为100头/斤。低于2000元就要考虑是否有假了,如果在千元以下,均系多遍反复加盐加工或掺夹杂质晒干,鲜海参在加工干海参工艺过程中经过煮、盐渍、拌灰、晒干等加工工序,但绝大多数消费者不了解,在必要的煮、盐渍工艺之外,每多煮和盐渍一遍,能使海参重量增加一两多盐,虽然价格比价格比较便宜,看起来好像买到便宜的海参,实际上这种海参的真实重量(包括盐)会是优质海参体重的一倍,也就是加工者用加工一斤盐干海参的鲜海参原料加工出两斤、甚至更多份量的盐干海参,更重要的是海参的活性物质大都流失,已起不到滋补作用。商贩的利润增加了,消费者的权益归零了。还有一种情况,如果是虾池和围堰养殖的海参,严格按照加工工艺加工,其合理的市场售价约为1500-2000元/斤(以上数据仅供参考)。
